Chahan Hana
𝟏. 𝐒𝐞𝐥𝐟-𝐢𝐧𝐭𝐫𝐨𝐝𝐮𝐜𝐭𝐢𝐨𝐧
When we lived in Nagoya, we used to come to Takayama often and we became more and more fond of this town. We decided to move to Takayama in 2017 and opened Chinese restaurant, Chahan Hana in April on the same year. Chahan means fried rice. My husband is the Chef and I am doing office work and customer service. At first, we thought our guests would be mainly locals but since there are so many tourists in Takayama we decided to focus on that as well.
𝟐. 𝐅𝐞𝐚𝐭𝐮𝐫𝐞
When you usually go to a restaurant, most of the waiting time is boring. Therefore, we started to think how to make interesting even guests are waiting. Instead of our guests are waiting for their dish, it would be nice to have them do something or communicate with us to make them feel part of our family.
Especially guests from overseas like Japan's uniqueness, so I thought that origami might have been a good starting point and I was right. Guests from overseas enjoy making origami and most of the time they even bring it back home! With this kind of activity, we are also able to communicate with them. After all, cooking is important in restaurants, but I think that hospitality must be considered as important.
𝟑. 𝐂𝐨𝐦𝐦𝐢𝐭𝐦𝐞𝐧𝐭
I stick to the authentic taste of Chinese food here in Chahan Hana. I am happy when my guests are satisfied with what they order so I always give it my best. A lot of guests coming here are from Asia so I want them to feel at home when they come here.
𝟒. 𝐌𝐞𝐦𝐨𝐫𝐢𝐞𝐬 𝐰𝐢𝐭𝐡 𝐜𝐮𝐬𝐭𝐨𝐦𝐞𝐫𝐬
It is always nice to interact with them. They are friendly and always happy to share their own experiences and advice which I always listen to. Some people even came for three days in a row. They even brought their friends sometimes. Then, when they go back home, they send me emails or gifts.
Once we had a customer from Taiwan. He was very pleased with the food and we become friends. It happened because he has a company making seasoning for Chinese food. He sent me the seasonings as a gift. I was both surprised and very happy.
𝟓. 𝐑𝐞𝐜𝐨𝐦𝐦𝐞𝐧𝐝𝐞𝐝 𝐩𝐥𝐚𝐜𝐞𝐬 𝐢𝐧 𝐓𝐚𝐤𝐚𝐲𝐚𝐦𝐚
I like the atmosphere of Takayama. I also like to see the morning markets and take a walk.
𝟔. 𝐂𝐨𝐫𝐨𝐧𝐚 𝐦𝐞𝐚𝐬𝐮𝐫𝐞𝐬
We are following the corona standard measures such as wearing masks, limiting the number of customers and leaving more space opened between tables. We are also always making sure to ventilate the room.
